veggie variety!!! (side dishes)

we all know that we all need to eat more veggies…not just a dang salad, day in…and day out. here are some ideas:

I tried these spicy parsnips and you might want to try something you are more familiar with first, but please, try something new…step out of the box!! I thought these were pretty amazing!

3 large parsnips
1/2 tsp sea salt
1/2 tsp pepper
1 clove of garlic minced
1/2 tsp cumin
1 tsp paprika
1/4 tsp of cayenne pepper
3 TBSP coconut oil

and instead of using cayenne pepper, i used some trader joe’s chipotle type spice that you grind up…akin to a mrs.dash, but just some nice smokey spices that doesnt have salt added to it.

Coat diced parsnips in coconut oil. sprinkle rest of ingredients on top and toss to coat.
oven at 400 degrees for 25 to 30 minutes.

something I haven’t tried, but looks yummy! and is different!
roasted mushrooms with balsamic vinegar and garlic/thyme!

Verdict on the cauliflower/sweet potato dish : more Basil (dried) less paprika/cayenne. More onion…and add bacon pieces!!(for fun) I didn’t follow the recipe exactly…so have fun with it, its still super yummy
