veggie variety!!! (side dishes)

we all know that we all need to eat more veggies…not just a dang salad, day in…and day out. here are some ideas:

I tried these spicy parsnips and you might want to try something you are more familiar with first, but please, try something new…step out of the box!! I thought these were pretty amazing!

3 large parsnips
1/2 tsp sea salt
1/2 tsp pepper
1 clove of garlic minced
1/2 tsp cumin
1 tsp paprika
1/4 tsp of cayenne pepper
3 TBSP coconut oil

and instead of using cayenne pepper, i used some trader joe’s chipotle type spice that you grind up…akin to a mrs.dash, but just some nice smokey spices that doesnt have salt added to it.

Coat diced parsnips in coconut oil. sprinkle rest of ingredients on top and toss to coat.
oven at 400 degrees for 25 to 30 minutes.

something I haven’t tried, but looks yummy! and is different!

Lunch to Go

fast and easy:
one of my first meals: a healthy take on tuna!

the first time was okay, but tonight, I just made it with extra Avocado, and I’d rather eat it that way, but you can do what tastes good for you. 😛

check out that site above. it’s pretty amazing stuff. Instead of a scallion (i just dont buy them…) I used some green onions instead. And I didn’t add jalepeno this time either. Instead, I added some Chipotle hot sauce and it was bomb. 🙂 I added extra avocado and voila! a huge healthy lunch for tomorrow. Like i said, add what you want, make it your own.

Goes well with roasted brussel sprouts

I haven’t Had a chance to try this yet, but it looks good!! Post what you think if you try it.

Roast some turnips with this:
dice the turnips, coat in coconut oil (or your choice)
sprinkle salt/pepper
oven @ 400 degrees
put in oven for 20-30 minutes. turn halfway through.

enjoy! If you want to try something more familiar, do the same as above, but use sweet potatoes.



Before You Start

Here is what you asked for! I’m not super amazing at designing blogs, nor do I own a computer right now; I’ll do my best. so here are some basics, ideas, and meals (&links)

I’ve been basically eating Paleo and getting amazing results in a short amount of time without going hungry. now, I’m not saying you need to be as strict as I am being, because If i feel like eating some cheese, I will. here are some general guidelines: Paleo is basically eating protein and veggies at every meal. they do not eat corn, grains, dairy, sugar, or any other processed type foods. My gym is currently doing the “FEBRUARY SUGAR SMACKDOWN” I just decided to take it another step, and I have had amazing results. It does take planning and it does take willpower, but if I can do it, ANYBODY can do it!!!

remember food is 80% and exercise is 20%.
Sleep is just as important as eating
drink lots of water, it helps with cravings, detoxing, energy, and “feeling” hungry. I aslo try to drink more tea.
make meals ahead of time so that you can reach for that piece of apple and nut butter instead of something that will sabotage your weightloss and healhy eating plans.
also, a food journal is a great way to look back and see what you are putting into your mouth. it makes me very self aware, and i then make better choices. 🙂
